Funky Finger Sandwiches

Make sandwiches with different types of  fillings and cut them into fun shapes with cookie cutters. Try sweet sandwiches too,  with fillings such as honey, jam, maple syrup, and bananas.

 

Sausage and mozzarella Croissants

 Ingredients

A tin of miniature hot dogs or a packet of mini sausages,

Refrigerated croissant dough

strips of mozzarella cheese.

Unroll and divide croissant dough. Place a hot dog or sausage and some cheese in the middle of each triangle. Roll up and bake according to package directions, or until lightly browned.

 

Sweet and Savoury kebabs

For savoury kebabs use chopped cooked turkey breast, cubed cheese, cucumber chopped, and cherry tomatoes

For sweet kebabs use chopped fresh fruit such as strawberry’s halved, peach, kiwi, apple, seedless grapes (left whole) and dried apricots

Thread all your chosen food onto a skewer until full, leaving enough room at each end to hold it.

 

Finger Dipping Strawberries                                                                        All you need for this finger dipping dessert is a container of strawberries, a packet of chocolate chips and a microwave.

Wash strawberries; dry well or the chocolate won’t stick. Microwave the chocolate in a bowl for 30 seconds (monitor closely, since microwave times vary depending on wattage-power); remove and stir a few times; repeat 2 more times. Stir until all lumps have melted. Microwave again as necessary.

Serve while chocolate is still warm (but cool enough not to burn). Kids simply dip strawberries into the chocolate and lip-smack away. Try some white chocolate chips too.

 

 Pizza Pitas

Ingredients:

Pita bread

Pizza sauce

Grated cheese

Pizza toppings

 

Halve the pita and carefully open the pockets. Spoon in sauce, cheese and toppings. Wrap in foil. Bake at 350º for 5-7 min. or until cheese melts

 

Peanut butter balls

Ingredients

1/2 cup of peanut butter

1/2 cup of honey

1 cup of crushed cornflakes

2 tablespoons of powdered milk

 

Mix all ingredients well, take a small amount and roll into a ball, continue to do this until all the mixture has been used, set aside in the fridge to harden.

 

Chicken Quesadillas

you’ll need .

chicken breasts shredded

Grated cheese

and a package of flour tortillas

 

Precook chicken and shred into thin strips. Sprinkle cheese on half of each tortilla and add a few strips of chicken. Fold tortillas and place them in a dry non stick pan, cook on one side until slightly golden and the cheese has started to melt, then carefully flip it over and cook the other side until it has turned slightly brown, Cut quesadillas into pieces. Serve with salsa and sour cream.

 

English Muffin Pizza

You will need English muffins halved, tomato pizza sauce, various toppings and grated cheese, spread the tomato pizza sauce onto the split muffins, then top with your chosen toppings and grated cheese, place under grill until the cheese melts.

 

Cajun Potato Wedges

Ingredients

1lb new potatoes

Olive oil

Cajun spices

Salt and freshly ground pepper

 

Pre heat oven to 200c/400f/gas mark 6, place the potatoes in a glass dish, cover with cling film, pierce cling film with fork band place in the microwave on medium until almost tender. Cut the potatoes into wedges and place them in a roasting tin, drizzle with olive oil and season, sprinkle on the Cajun spices and place wedges in the oven for 30mins or until browned. Drain on absorbent paper and serve.

 

Chocolate fondue

Ingredients:

1 part butter or margarine

1 part cocoa powder

1 1/2 parts sugar

1 part low-fat evaporated milk

Your choice of dipping snacks (sliced banana, kiwi slices, pineapple chunks, strawberries,  grapes, pear slices, orange sections, apple slices, marshmallows)

 

   Melt butter or margarine. Stir in cocoa powder; mix well. Add sugar and evaporated milk. Cook over low heat until smooth. Remove from heat and allow to cool enough to handle, divide fondue in paper cups so each guest has a personal dipping pot. Provide fondue sticks or toothpicks for dipping food. Serve with tray of favourite dipping snacks.

 

   Ice-cream factory

Pre ball the ice cream and return to the freezer, this can be done well in advance.

      Place a variety of ice-cream toppers in separate bowls, cherries, sprinkles, candy pieces, mini marshmallows, chopped nuts, chocolate buttons, crushed crunchie bars ect and a variety off ice cream syrups and squirty cream. Issue each guest with a paper cup with their scoop of ice cream and let the help their selves to the toppings
